The Oberoi, Gurgaon has unveiled the newest culinary attraction: Ziya, an all new Indian fusion restaurant that promises to redefine the dining experience for gourmands. Ziya celebrates the varied culinary heritage of India, from Kashmir to Kerala, all imbued with a modern twist. Curated by Michelin-star Chef Vineet Bhatia, MBE (Member of the Most Excellent Order of the British Empire), it has all the makings to be the next hotspot. Further, the name, ‘Ziya’, meaning splendour and shine, perfectly encapsulates the restaurant’s dedication to excellence in dining.

Chef Bhatia is no stranger to the culinary space, as he made history in 2001 by becoming the first chef of Indian origin to receive a Michelin star for Indian cuisine. And, has since established critically acclaimed restaurants in London, Switzerland, and the Middle East. Bhatia also has a relationship with The Oberoi, mentoring the teams at Ziya at The Oberoi, Mumbai, and Dhilli at The Oberoi, New Delhi. His vision for the menu at Ziya is simple yet profound, to offer guests a journey through the rich tapestry of Indian flavours, reimagined through the lens of contemporary culinary artistry. “Ziya at The Oberoi, Gurgaon, is a celebration of India’s diverse culinary landscape, reimagined with modern techniques and contemporary flair. We aim to offer our guests an unforgettable dining experience that pays homage to tradition while embracing innovation,” chef Bhatia elaborates.

Each dish at Ziya is meticulously crafted to celebrate India in all its flavours, seamlessly intertwined with global influences. The à la carte menu includes plate pleasers, main courses, heritage bowls, and desserts. Ingredients are seasonal, locally sourced, and emphasise sustainable, organic, and premium quality produce. Some of the signature dishes curated by chef Bhatia include, Aloo Toffee, Pan-Grilled Sambhar Fish, Ghee Roast Lamb, and delectable desserts like, Kulfi Falooda Cheesecake or The Ziya Hug. Additionally, the cocktails at Ziya draw inspiration from indigenous ingredients. Choose from the Paan Royale, Swarnam Sour, and Royal Botanica for a refined dining experience.

You can also feast your eyes on Ziya’s decor, designed by Architecture Discipline. Just like the menu, it blends traditional elegance with a contemporary flair. It features high ceilings, reflective steel, and a visually striking entrance adorned with fire-fused glass against an old timber pattern. Nested arched pods define seating areas, complemented by caramelised glass table tops on brass supports. Hand-formed glass sconces and Art Deco-inspired chandeliers add a touch of sophistication, creating a dynamic ambience that merges past charm with future elegance.
