Who doesn’t love creating a new family tradition? The Sunday Sandwich Club can be exactly that, something that is non-negotiable. From your family chipping in to slice the breads, the young ones buttering the buns, and then carefully laying out the fillings on a tray as a family to make DIY sammiches, it’s one tradition you can explore and nurture too. Here are some fun recipes to get you started.

Chicken and brie with fig jam


Ingredients: 1 packet of ciabatta bread, 1 tbsp butter, 1 bottle of fig jam, ½ cup zucchini (sliced in rounds), 2 tsp oregano, ½ tsp rosemary, 1 cup boiled and shredded chicken (or tofu for veggies), ½ cup rocket leaves (rinsed and chopped), 1 cup brie cheese, sliced thinly

Method: Slice the ciabatta and toast it. Apply butter and fig jam over both sides. In a pan, heat butter and sizzle zucchini over it until slightly browned. Set aside on a tissue paper to absorb. In the same pan, heat more butter and add oregano, rosemary, and chicken. Toss well and adjust the seasoning. Place chicken and zucchini on the freshly toasted bread and stack with the brie. Top with the rocket leaves. Pop the sandwich in the oven for 3-4 minutes until the cheese melts. Serve immediately.

Avo and blistered cherry tomato croissant sandwich


Ingredients: 2 tbsp olive oil, ½ cup cherry tomatoes (halved), 1 tsp balsamic vinegar, salt, 1 avocado (peeled), 1 tsp pepper, 1 tsp chilli flakes, 1 tsp pizza seasoning, 2 croissants (buttered), 1 burrata (sliced), ½ cup cucumber, 2 leaves of crisp iceberg lettuce

Method: In a pan, heat the olive oil, and add cherry tomatoes to it. Cook over high heat for at least 4-5 minutes until the tomatoes begin to char. Stir continuously. Add balsamic once cool, season with salt, and set aside. In another bowl, toss the whole avocado with pepper, chilli flakes and pizza seasoning and then slice the avocado. Open the croissant and stack with the avocado, burrata, cherry tomatoes, cucumber, and a few leaves of lettuce. Serve warm or cold as you like.

Grilled cottage cheese, cheddar and basil banh mi


Ingredients for the dip: 4 tbsp mint and basil puree, 3 tbsp hung curd, 3 tbsp mayonnaise, salt and pepper to taste

Ingredients for the sandwiches: Lots of olive oil, 1 cup cottage cheese, 1 tbsp dry oregano, salt and pepper to taste, baguette, shredded, cheddar cheese slices, 4 slices of cucumber, 4 slices of tomato, slices of lettuce

Method: Make the dip by mixing all the dip ingredients and set aside. To make the sandwiches: In a pan, heat oil and sauté the cottage cheese. Season it with oregano, salt and pepper and set aside. Line the baguette with cheddar cheese and heat it until the cheese melts. Fill it with cottage cheese, cucumber, tomatoes, and lettuce. Layer it with the dip and close the baguette.
